Garlic & chilli prawns and skate knobs on puréed butter beans
You can do this without the Skate ‘knobs’ but my local fishmonger had these and I couldn’t resist!
Olive oil
2 garlic cloves chopped
Butter beans tinned x2
Juice of 1/2 lemon 
S&P 
Warm the garlic in the oil, dont burn, add the drained butter beans and cook for a couple of mins…remove from the pan and set aside
No need to wash the pan

Parsley chopped (i used spinach because I didn’t have parsley!!)
Olive oil
1/4 tsp chilli flakes
225g peeled raw prawns (other small fish bits if you fancy!)
Heat the oil in the same pan, add chilli, chopped garlic and parsley cook over a gentle heat until sizzling, add the prawns and cook for about 3 mins…..
Purée the butter bean mix, add S&P and Lemon juice to taste…
Arrange on a plate, top with the prawns and pan juice.
Yum!  Serve with warm sourdough and salad leaves.
