Looking for the perfect weekend dessert? Try this yogurt pear cake..!

This is SO simple….you can use Apples if you prefer but i used Pears again because they are delicious at this time of year and i love using seasonal produce!
- Prepare a 9inch cake tin, i line it with grease proof paper…
- 5 pears, leave the skin remove the core, and slice and chop 4 into bite size chunks, slice the last pear and set aside for later
- Mix in a bowl, 320g plain flour, 1 teaspoon of baking powder, 200g caster sugar and a good pinch of salt.
- Stir in the chopped pear
- In a separate bowl mix 3 eggs, 1 teaspoon of vanilla extract, 180g olive oil and 180g of plain yogurt, whisk together then add to the pear mix. Pour the batter mix into the prepared tin.
- Decorate with the sliced pear.
- Mix 1 teaspoon cinnamon powder with 70g caster sugar and 20g melted butter and sprinkle over the top of the cake…..
- Bake in the centre of the oven at 180…(i have an Aga so i just place it on the bottom of the roasting oven) for about 45 mins.
- Allow to cool then dust with icing sugar.
YUMMY served warm with double cream or custard (Richard loves custard, i hate it!!)
